Choc-Coconut & Cashew Cookies

These delicious chocolate cookies are egg and dairy free!

Ingredients…

  • 2 ½ cups self-raising flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup vegetable oil
  • 1 ½ cups brown sugar firmly packed
  • ½ cup raw sugar
  • 1/3 cup organic cacao powder
  • 2 tablespoons chia seeds ground into powder and soaked in 4 tablespoons of water
  • 1 cup desiccated coconut
  • 1 cup cashews – crushed

 

To make…

Preheat oven to 150°c and line baking trays with oven proof paper.
Combine flour, baking soda, cacao powder and salt – set aside.  In a mixing bowl cream together oil, brown sugar and raw sugar then add chia seed/water mixture which will have formed a jelly type substance. Add wet mixture to dry, stir in coconut and cashews then mix well until combined.  Use a desert spoon to measure out individual cookies, roll into balls then flatten on tray to approximately 1cm thick using the back of a fork or the palm of your hand.

Bake for 20-25 minutes and then let them cool on the pan before moving them to a wire rack.  Cool completely before eating as the mixture will be quite soft until completely cooled.
